Rad Red Smoothie

This week's smoothie was another successful experiment in combing the ingredients I had on hand. I wanted to clean out the fridge a bit before heading to the Farmer's Market so I used whatever I could find. The beets and the romaine give it a deep, earthy flavor, but the pineapple and the blueberries sweeten things up a bit. This is an enzyme-rich smoothie that will help cleanse the blood and digestive track so if you are feeling a little sluggish and weighed down try this boost!

Recipe:

  • 1 cup frozen pineapple
  • 1/2 cup frozen blueberries
  • 1 head romaine lettuce
  • 1 medium beet*

*If beets are typically too earthy for your taste, add 2 tablespoons fresh lemon juice OR 1 inch of ginger for a lighter flavor. Let me know what you think by posting below. I would love to hear your favorite ingredient combos!
